In Austria in 2021 a volume of 520 million kilogram hay milk was processed. This was 10 million kilogram more than in 2020 Hay milk comes from cows that in winter get traditional (dry) hay, in summer they are on pasture. Farmers got for hay milk a bonus of six eurocents per kilogram compared to regular milk. Farmers that produced organic hay milk got a bonus of 17 eurocents. In 2021 in Austria 75 percent of the families bought hay milk or a hay milk based product. Of the in Austria produced hay milk and hay milk based products, mainly cheese, 60 percent was exported to Germany.
