In Austria in 2019 a volume of 510 million kilogram hay milk was processed. Hay milk comes from cows that in winter get traditional (dry) hay, in summer they are on pasture. Farmers got for hay milk a bonus of five to seven eurocents per kilogram. The sales of hay milk in Austrian stores increased 5.4 percent to 105 million euro. However: 60 percent of the Austrian hay milk and hay milk cheese is exported, mainly to Germany.
